It is true that doctors don't seem to take allergies very seriously. Before I was diagnosed with my allergy (to gluten)I asked my doctor for the test for it and he said, "I don't think you have that but, if you want to do it, you can, if only to rule it out." Turns out I was right. I feel so much better too.
As for coffee allergy, it must be somewhat rare or, under reported because I am having trouble finding information relating to an allergy to coffee. I have read articles about a "caffeine allergy" and "tanin headaches". None seem to mention rashes or any other symptoms. My thought was that there must be a protein in coffee that causes it. I even tried to find out if there was a name for coffee protein. I could just be barking up the wrong tree.
If anyone has a place to find more information on coffee allergy, please let me know. I would love to do an article on it.
